Nani’s Achar Paneer Curry
- 250g paneer
- 2 tbsp Nani's Achar Mango Pickle
- 1 medium onion
- 1 tsp ginger
- 1 tsp crushed garlic
- 2 chopped medium sized tomatoes
- ¼ cup water
- 1 cup yogurt
- 1 chopped medium onion
- 1 chop olive oil or avocado oil or ghee
- Salt to taste
- Wash and cube the paneer into small bite sized chunks
- Mix Nani's Achar Mango Pickle with yogurt in a bowl. Add paneer pieces to the mixture and set aside to marinate
- Blend ginger, garlic and onion into a pureed mixture and set aside.
- Cube the onion and green pepper into bite size pieces.
- Heat 2 tbsp oil in a wok or pot. Add the ginger, garlic and onion mixture and saute until the colour changes.
- Add the chopped tomatoes and continue sauteing.
- Add water to prevent the mixture to sticking or burning
- Add and sautee the green peppers and onions
- Add the marinated paneer and cook on low/medium heat
- Add a pinch of salt, as needed
- Simmer on low/medium heat until some oil rises on top
Serve hot with roti, naan or rice.
