Nani’s Egg Salad Sandwich

Check out our spin on a classic egg salad sandwich which includes Nani’s Achar– Carrots/Mixed Veggies Pickle to bring in notes of mustard and a whole lot of crunch! Nani’s Achar brings an exotic heat to your traditional egg salad, which makes it perfect for breakfast or lunch, or even an elegant high tea/brunch. This sandwich is sure to become a family favourite.


Nani’s Egg Salad Sandwich

Serves 4 


8 eggs

½ cup mayonnaise

2 tablespoon Nani’s Achar Carrots/Mixed Veggies Pickle

¼  cup diced green onions

Salt and Pepper to taste


4 slices of your favourite bread


Step 1:

Place eggs in a saucepan and cover with water. Bring water to a boil and remove from heat and cover. Cover and let eggs stand in hot water for 10 minutes. Remove from hot water and cool in a bowl of ice water. Peel and chop the eggs. 

Step 2:

Place the chopped eggs in a bowl, and stir in the mayonnaise, Carrot/Veggies Pickle, and green onions. Season with salt and pepper. 

Step 3:

Place a layer of lettuce on your bread slice. Spread Nani’s Egg Salad on top. Top with another lettuce leaf and the other slide of bread. You can also serve with your favourite crackers.

Pro tip: You can also mix the boiled eggs, mayo, Nani’s Carrot/Veggies Pickle, and green onions in a food processor to get a more uniform egg salad mixture.
